Vegetarian Recipes Home Cooked with Store Cupboard and Pantry Ingredients

Vegetarian Artichoke Pasta

Prep time: 20 mins, cooking time: 30 mins. Serves 2.

Ingredients

  • Drained artichokes from can diced in half
  • 250gms of tagliatelle pasta
  • 3 tbsp of olive oil
  • 2-3 cloves of garlic
  • half a lemon and half a chilli and parsley for garnishing
  • for the sauce 50ml milk, 50 ml single cream, 25gm butter and 1tablespoon flour

Method:

  • Boil and drain the pasta as per instruction on the pack
  • in a frying pan heat the oil and fry the garlic then add the artichokes and chilli
  • Make a simple white sauce by mixing in flour and milk and stirring until no lumps, and then heating this in a pan and adding butter and single cream
  • add the fried artichokes with garlic and chilli and then the pasta and toss and coat
  • serve by garnishing with lemon and parsley

Tinned pineapple and desiccated coconut traybake with easy cream topping

Prep time: 20 mins, cooking time: 40 mins.  4 Servings

Ingredients for traybake

  • 250g of canned pineapple pieces drained
  • 200 g butter softened and a little extra for greasing
  • 50 g double cream
  • 100g of dessicated coconut
  • 250 g golden caster sugar
  • 3 eggs
  • 150 g self-raising flour

Ingredients for the topping

  • 100gm double cream
  • 15gm tube of yellow food colour
  • 50gm icing sugar
  • 2 tablespoon of the pineapple juice from the can

Instructions

  • Use a 8inch cake tin or any suitable baking tray and grease the inside
  • Preheat the oven to 180℃ (160℃ fan)
  • Roughly chop the drained pineapple
  • Beat the butter and sugar together until very pale and fluffy, then add the eggs one at a time and beat and incorporate after each one.
  • Now add the flour little by little and fold in
  • Add the coconut and chopped pineapple and mix well
  • Pour the mixture carefully in the baking tray and then flatten the top.
  • Bake in the centre of the oven for 40 – 45 minutes and check if cooked and springy
  • Allow to cool and lift and place in suitable dish for adding the cream topping

For the topping: Beat 100gm double cream with some yellow food colour, icing sugar and a little of the juice in which the pineapple was soaked for extra flavour making sure the mixture is not too runny or stiff, so it can be spread over the cake.

Easy to assemble cottage cheese pineapple cheesecake

Ingredients

  • 6 chocolate cookies
  • 6 ginger biscuits
  • 150gm cottage cheese
  • 150 double cream whipped
  • 100 gm golden syrup (or add more according to taste)

 

  • 150 Golden castor sugar
  • 250gm chopped drained pineapple pieces in juice

Method

  • Crush the chocolate cookies and ginger biscuits and mix together
  • Using a suitable 8-inch tray, line the bottom with parchment paper
  • Layer the biscuit base
  • Beat the cottage cheese to a smooth texture and then add the whipped cream and mix together, then add the golden syrup for easy mixing
  • Pour over the biscuit base and cover
  • Cover with cling film and chill in the fridge for atleast 2 hours
  • In a pan carefully caramelise the sugar and add the pineapples and cook until the pineapple pieces are caramelised and golden brown
  • Set aside and allow to cool
  • Now add the caramelised pineapple pieces to the chilled base as topping
  • Enjoy this very simple, no fuss cheesecake crammed with flavours

Pasta with Anchovies

Prep time: 20 mins, cooking time: 30 mins. Serves 2.

Ingredients

  • 250g tagliatelle pasta
  • 2 tbsp olive oil
  • Creamy Pepper Sauce 25g
  • 8-10 anchovy fillets from can
  • 2 garlic cloves
  • 4 Silverskin onions in crisp tangy vinegar from bottle drained plus 1 tablespoon of the vinegar for seasoning
  • Ground pepper, dried herb and salt to taste

Method

  • Cook the pasta in a large pan of well salted boiling water according to the instructions on the packet and drain.
  • Slice the anchovies finely and crush the garlic.
  • Heat oil in a frying pan and fry the garlic until they release aroma and are golden brown, then add the anchovies and drained onions and cook through for 3-4 minutes
  • Add the pasta to the anchovy mix in the pan. Also add 1 tbsp of the vinegar in which the onions were soaked for a tangy hit.
  • Prepare the creamy pepper sauce as per instruction and add some of the prepared sauce to the pan adjusting the quantity to the required consistency and toss everything together to coat thoroughly.
  • Season generously with black pepper, any dried herb (or fresh if available) and salt to taste.
